Seeing as how my main stay gas grill is down for the count again I loaded up the Char-Broil Offset Grill/Smoker with fresh Charcoal, and wads of newspaper discussing the National debt. After firing up the paper I took out 2-8oz strip steaks and 4-8 oz Sirloin steaks and and rubbed into them a little love, including black pepper, fresh garlic, crushed red pepper and a bit of Chef Paul’s Magic Salt Free Seasoning. I let them sit for about 30 minutes or so and dressed them with some Worcestershire sauce and took them out to the smoker.

It was reading a good 325 –350 degrees so I laid out the steaks as close to the flame as possible but not over the flame and set the flue to draw the heat and smoke over the meat. It took about 25 minutes of moving the steaks around but I was very pleased with the end results, and after sampling the better part of one sirloin took the remainder off the grill to tent for about 5 –10 minutes.

Meanwhile I had cooked up about a pound and half of Barilla, Protein Plus Pasta and had it chilled and off to the side. To the pasta I added 6 ounces of small diced Carr Valley Smoked Gouda, one small onion rough chopped, and one medium orange bell pepper rough chopped. I then added about 6 ounces of cold pressed Extra Virgin Olive Oil and 3 ounces of Chianti Red Wine Vinegar for a nice snappy crisp bite. As for seasoning I added a few pinches of coarse sea salt, a few grinds of fresh black pepper, 1 tsp of dried basil and 1/2 tsp of Chef Paul’s Herbal and Pasta Magic. Once everything was in the bowl I tossed it a bit and went back to freshly grilled steaks.

I gingerly took off any fat and gristle and cross cut against the grain into 1/8” strips that were about an inch long. I did so to the remainder of the steaks stopping now and again to give my youngest daughter a piece or two. I tossed the steak strips into the blend of pasta, seasoning and vegetables and mixed to combine the flavors. As you can see from the picture the color was bright and the pasta dish was loaded with flavor.

The flavors that blended together only deepened with the time in the fridge and brought out the nice juiciness of the steak mirrored with the crisp tang of the marinated pasta and vegetables. It was nice and light yet, hearty enough to satisfy the pickiest of steak eaters and the smoky flavor of the Gouda really complimented the entire dish giving it a complexity that was simply delicious.
